Soba, or Japanese buckwheat noodles, is a very popular dish in Japan. Served both hot or cold, it is considered polite to slurp the noodles loudly.

Ingredients
Soba Noodles
2 sticks
Scallion
2
Wasabi
1 teaspoon
Mentsuyu
1 cup
Nori
1/2 sheet
Preparation
Cut nori into long strips.
Cut scallions.
Put scallions and wasabi in small bowl.
Have some cold water from the fridge available.
Directions
Boil water.
Put 2 sticks of soba noodles after the water comes to a boil.
Check the package to determine how long to boil the soba noodles.
After the elapsed time, quickly put the soba noodles in a strainer and pour cold water from the faucet over it, turning the soba over with your hand.
After all the soba is cold, split it up into 2 separate bowls..
Pour mentsuyu into 2 small cups.
Follow directions on the mentsuyu to add the appropriate amount of chilled water.
Put the nori on top of the soba.
